TEXAS SHEET CAKE COOKIES

 2/3 canola oil

4 eggs

beat together then add:

2 boxes of chocolate cake mix

Form into a ball and place on a lined cookie sheet and bake at 350 degrees for 9 minutes.  Let cookies cool on wire rack then make frosting.

Frosting:

1 cup butter melted in a pot over medium heat then add 6 T whole milk and 4 Tablespoons of cocoa powder. Take off the heat and then add 4 cups of powdered sugar. Ice cookies and let sit to cure.

Chocolate Snowball Cookies

Combine ingredients and set aside:

 1 2/3 c flour

1 1/2 t baking powder

1/2 c cocoa powder

1/4 t kosher salt


Beat with electric mixer until light and fluffy:

1/2 c butter softened

1 1/4 c white sugar 


Then add the following to butter mixture and mix until smooth and creamy:

2 eggs

1 t vanilla


Incorporate dry bowl ingredients with wet ingredient bowl and refrigerate for 1 hour.

Preheat oven to 350 degrees.  Roll dough into 1" ball and dip in white sugar then powder sugar bowls, measurements below:

1/3 c powdered sugar

1/3 c white sugar

Place on baking sheet and bake for 10 minutes.

Magic in the Middle Cookies

2 pkg devils food cake mix
4 eggs
1 c shortening

Mix above ingredients and use cookie scooper for form balls then push the back of the cookie scooper in the cookie to make a dip.  

Mix these two ingredients below really thoroughly and roll into small balls that fit in the dip in the chocolate cookies and form the chocolate dough around the peanut butter dough.

3/4 c peanut butter
3/4 c powdered sugar

Mix shortening and eggs together until smooth. Gradually add the cake mix with a hand mixer.
Roll dough into one inch balls. Flatten balls on greased cookie sheet. Place in oven for 7-8 minutes on 350 degrees.

Trits Costa Rica

1 stick melted butter
1 egg
1 c sugar
2 c crushed graham cracker, vanilla wafers or Trader Joe's letter cookies

Preheat oven at 350 degrees.
Beat the butter and egg together, this is a MUST.   Then mix in the graham cracker and sugar.  Roll out mixture on a cookie sheet 1/8-1/4" thick.  Using a silicone baking mat works best.  Bake for 18 minutes  or until golden brown.  Let cool for a couple minutes.  Using a glass or cookie cutter, cut out circles. Dipping glass in sugar helps keep it from sticking.  Let cookies cool completely.  Then assemble cookies in an ice cream sandwich with your choice of ice cream.  If you want to make just a crumble on top of homemade ice cream just crush up the cooked sheet of batter and store in a ziplock for a few weeks.

3 Ingredient Peanut Butter Cookies

1 c peanut butter
1 c sugar
1 egg

Preheat oven to 350 degrees and spray cookie sheets with oil.
Cream all the ingredients.  Fold in chocolate chips if you like.  Place cookies on cookie sheet and press fork criss cross on it and bake for 7 minutes.

3 ingredient Pumpkin Chocolate Chip Cookies

1 box spice mix
15 oz pumpkin puree
16 oz chocolate chips (milk or semisweet, you choice)


Preheat oven to 350 degrees and spray cookie sheets with oil.
Cream the spice mix and pumpkin puree together, then fold in the chocolate chips.
Drop balls of dough and bake for 15 minutes.

Mexican Wedding Cakes

1/4 lb butter
1/2 c pecans (chopped)
2 T sugar
1 c flour
1 t vanilla

Add in order given. Shape into balls the size of walnuts and press flat. Bake 20 minutes starting in a cold oven, 300 degrees. While warm, roll or dip in powdered sugar.

Sugar Cookies

1 c creamy milk (canned milk)
1 1/4 c sugar
2 t baking powder
1 t lemon flavoring
1 c shortening
2 eggs
1 t baking soda (dissolved in 1 T water)
4 c flour

Cream eggs, sugar, and shortening. Add milk, baking soda, and flavoring. Mix in dry ingredients. Roll out, cut, and bake at 350 degrees for 10 minutes.

FROSTING:

Powdered sugar with butter and canned milk.

Scottish Shortbread IV

1 c butter (room temperature)
1/2 c packed brown sugar
2 1/4 c flour

Mix butter and sugar together. Add flour in a little at a time. Knead the dough for 5 minutes. Bake on an ungreased cookie sheet for 15-20 minutes on 325 degrees.

Snicker Doodles

1 c shortening
1 c margarine or butter (room temp)
3 c sugar
4 eggs
5 1/2 c flour
4 t cream of tartar
2 t baking soda
1/2 t salt
4 T sugar
2 t cinnamon

Heat oven to 400 degrees.  Mix shortenings, 3 cups sugar and eggs.  Mix in all dry ingredients except sugar and cinnamon.   Chill dough.  Roll 1 inch balls in sugar and cinnamon mixture and place on non-greased cookie sheet.  Bake 8-9 minutes.

Butter Cookies

1 lb butter (room temp.)
6 eggs (room temp.)
2 c sugar
1 lemon rind fine grated

Cream butter & eggs. Gradually add the sugar and lemon rind and mix well for 3 minutes in mixer.

2 t baking powder
8 c flour

Mix flour and baking powder together, so the baking powder is evenly distributed throughout the flour. Then add this to the butter mixture above. Let dough chill overnight in fridge.

Bake at 300 degrees for 12 minutes.

Icing:
1 pkg (8oz) cream cheese (softened)
1/2 c butter (softened)
1/4 c milk
1 t vanilla
41/2 - 5 c powdered sugar

Cream the butter, cream cheese, milk, and vanilla until smooth. Then add the powdered sugar gradually, until you achieve the right consistency.

Homemade Oreos

2 pkg devils food cake mix
4 eggs
1 c shortening

Mix shortening and eggs together until smooth. Gradually add the cake mix with a hand mixer.
Roll dough into one inch balls. Flatten balls on greased cookie sheet. Place in oven for 7-8 minutes on 350 degrees.

Icing:

1 pkg cream cheese (softened)
1/4 c butter (softened)
1 tsp vanilla
3 c powdered sugar

Cream the vanilla, cream cheese, and butter until smooth. Gradually add the powdered sugar.

Variations: Use different cake mixes for flavor variations or flavorings for icings.
