CARROT CAKE R+D

4 eggs

FOR THE CAKE

1 1/2 c canola oil

1lb  peeled baby carrots

Whip it good!  All carrots should be broken down.  In a separate bowl add:

2 c flour

2 c sugar

2 t cinnamon

2 t baking soda

1 t salt

Add blended carrot mixture to dry ingredients and mix with hand mixture ot for a nice cake batter consistency.  Put in greased bundt cake pan at 350 degrees for 45-55 minutes.  Done when toothpick comes out clean.

FOR THE FROSTING

1/2 c softened butter

1 (8oz) package softened cream cheese

1 t vanilla

1 c powdered sugar (add more if needed)
